Tortellini with Ham & Peas

Ham and peas are a traditional culinary pairing, deftly balancing one another’s flavors and textures. In the case of this dish made with Armanino Cheese Tortellini, they offer a delightful fusion of convenience and gourmet flavor, perfect for busy weeknights or casual entertaining. Enveloped in a luscious cream sauce with a hint of garlic, the result is a satisfying meal that comes together in minutes.

Ingredients

  •  2 tablespoons unsalted butter
  •  1½ cups diced ham, ¼-inch cubes (about 4oz)
  •  1 medium shallot, finely chopped
  •  2 teaspoons Armanino Creamy Garlic Sauce
  •  1 cup frozen peas (no need to thaw)
  •  1 cup chicken broth, low sodium
  •  1 cup heavy cream
  •  2 tablespoons grated parmesan
  •  ⅛ teaspoon ground nutmeg (optional)
  •  kosher salt and black pepper
  •  1lb frozen Armanino Cheese Tortellini
  •  chopped chives and grated parmesan for garnish

Directions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the shallot and cook until softened, 2-4 minutes.
  3. Add the ham and creamy garlic sauce, stirring to combine.
  4. Add the chicken broth, cream, parmesan, nutmeg and a pinch each of salt and pepper; bring to a boil over high heat.
  5. Reduce the heat to medium and reduced until slightly thickened, about 3-4 minutes,
  6. Add the tortellini and peas and cook, stirring occasionally, until tender, 2-3 minutes (the sauce will thicken as it cools.)
  7. Taste and add additional salt and pepper if needed. Serve hot, garnished with grated parmesan and chopped chives, if desired.

Chef’s Tips

  • While ham is traditional, this dish is just as delicious with cooked, thick cut bacon or crumbled Italian sausage.
  • The frozen tortellini will cook quickly in the sauce. Take care not to overcook as they can fall apart.
