Tortellini Caprese Skewers

Everyone loves a skewer appetizer, and this one combines the fresh Mediterranean flavors of caprese salad with Armanino Tortellini.


  • ½ cup olive oil
  • ¼ cup chopped fresh basil, plus 1 cup leaves
  • 1 tablespoon lemon juice
  • kosher salt and ground black pepper
  • 2 packages Armanino Tri Color Cheese Tortellini, thawed
  • 1 lb cherry or grape tomatoes
  • 1 lb bocconcini mozzarella


  1. Whisk oil, chopped basil, lemon juice, ½ teaspoon salt, and black pepper in large bowl until well blended. Add pasta, tomatoes and mozzarella; toss gently. Let stand 30 minutes to marinate.
  2. Thread 1 tortellini, 1 tomato, 1 mozzarella ball and 1 folded basil leaf onto a skewer. Add another tomato and tortellini. Repeat with remaining ingredients. Drizzle with remaining marinade before serving.

Chef’s Tips

  • Substitute 1 pound fresh mozzarella cheese, cut into small pieces, for the bocconcini.
