One Pot Sausage Tortellini

Craving the comfort of Italian food in short order? This One Pot Sausage Tortellini is your answer. Combining zesty Italian sausage, rich tomato sauce, and pillowy cheese-filled pasta, this dish delivers restaurant-quality flavor with minimal effort and cleanup.

Ingredients

  •  2 tablespoons olive oil
  •  ½ large onion, chopped (1 cup)
  •  1 pound hot or sweet Italian sausage, bulk or casings removed
  •  2 tablespoons tomato paste
  •  ¼ cup water
  •  2 tablespoons Armanino Creamy Garlic Sauce
  •  28oz can crushed tomatoes
  •  1½ teaspoons dried basil
  •  salt and pepper
  •  1 pound Armanino Cheese Tortellini
  •  grated parmesan, for serving

Directions

  1. Heat the olive oil in a large Dutch oven or skillet over medium-high heat.
  2. Add the onion and a pinch of salt and sauté until tender and lightly browned, about 5 minutes.
  3. Crumble the sausage into the pan, breaking it into small pieces with a wooden spoon, and cook, stirring occasionally, until the sausage starts to brown, 8-10 minutes.
  4. Stir in the creamy garlic sauce, tomato paste and water then add the crushed tomatoes, basil and a pinch of pepper, scraping up the browned bits from the bottom of the pot.
  5. Simmer over medium heat until thickened, 10-15 minutes.
  6. Stir in the frozen tortellini and cook until warmed through, about 2 minutes, stirring once or twice.
  7. Serve hot garnished with grated parmesan.

Chef’s Tips

  • Instead of Italian sausage, try ground turkey, lean ground beef or a plant based sausage.
  • For an even quicker version, substitute a jarred sauce for the crushed tomatoes.
  • To make ahead, cook the sauce, cool and refrigerate up to 3 days ahead or freeze. Heat and then stir in the tortellini. Dinner’s ready in about 5 minutes.
