Bring the game home to you with this classic sports bar-inspired dish, decked out in tangy hot sauce, celery, and blue cheese crumbles.
Ingredients
1 ½ cups Buffalo hot sauce (12 ounces)
4 tablespoons butter
2 lbs Armanino Turkey or Beef Meatballs
2 cups thinly sliced romaine lettuce
½ cup thinly sliced celery
¼ cup grated carrots
1 tablespoon finely chopped fresh parsley
salt and ground pepper
6 sub sandwich rolls or 1 French bread loaf, cut into 4 rolls
½ cup blue cheese crumbles
Directions
Combine hot sauce and butter in medium saucepan or large skillet. Heat on medium-high heat until butter is melted. Add frozen meatballs; stir until coated with sauce. Bring to boil. Cover. Cook on low heat 15 minutes or until meatballs are heated through, stirring occasionally
Meanwhile, combine lettuce, celery, carrots and parsley in large bowl. Season with salt and pepper.
Fill each roll with some of the lettuce mixture, 5 or 6 sauced meatballs and 2 Tablespoons cheese.
Chef’s Tips
To give the meatballs something to nestle into and prevent them from rolling off the sandwich, remove some of the bread from the bottom part of the roll.
Not a fan of blue cheese? Omit the cheese and substitute ranch dressing.
