5-Minute Pesto Shrimp Tortellini

A wholesome, flavorful dinner comes together in a flash with just shrimp, veggies, our Tri Color Tortellini and Armanino Basil Pesto.

Ingredients

  •  8 oz frozen cooked medium shrimp
  •  2 cups frozen stir-fry vegetable blend with asparagus
  •  16 oz Armanino Tri Color or Cheese Tortellini, thawed
  •  7 oz Armanino Basil Pesto, thawed

Directions

  1. Rinse shrimp in strainer under cold water. Meanwhile, heat 1 tablespoon olive oil in large nonstick pan on medium-high heat.
  2. Add vegetables to pan; cook and stir 1 minute. Add shrimp and tortellini; toss well. Cover. Cook 4 minutes or until heated through. Stir in pesto until well blended.
