Southwest Chipotle Pesto is a great ‘add’ to salad dressings. Sometimes we use Ranch dressing, Blue Cheese or sometimes a vinaigrette. Featured here is a crisp green salad with BBQ chicken (a little bbq sauce mixed into the chicken is tasty), yellow hominy, black beans, tomato, queso fresco, freshly fried flour tortilla chips & chipotle vinaigrette. (Just mix in about 20% Southwest Chipotle Pesto to a mild white balsamic vinaigrette).
