WHITE BUTTON, PORTABELLO,
SHIITAKE AND PORCINI


GARLIC SAUTÉED ACORN SQUASH

3 oz Armanino Mushroom Sauce
1 medium acorn squash
2 Tbs Armanino Garlic Zing 
        (or simmer large clove garlic,
         minced, in 3 tbs canola oil until 
         soft, add ¼ tsp finely grated
         lemon zest and purée until smooth)
Wash squash, puncture skin and microwave on high 5 minutes, turning once or twice. When cooled enough to handle, slice in half from tip to tip, then
crosswise into 1" slices. (Three center slices make
one serving. Save ends for use in soup.)
Add 1 Tbs Garlic Zing to very hot skillet and quickly
brown squash slices on one side. Turn and brown
on other side in second tablespoonful of Zing. Gently warm mushrooms (about 45 seconds in microwave). Place squash on serving plate and garnish with mushroom sauce.
