Tomato Ginger Chicken
1/4 c Dried Tomato & Garlic Pesto
6 oz boneless, skinless breast of chicken
1 tbs crushed ginger
Sauté chicken with ginger just until juices no longer run pink. Add pesto and turn chicken several times to
coat thoroughly. Use rubber scraper to pour juices over when serving.
Twice Tomato Potato
Hollow out halved baked potatoes, mash removed center portions with
Dried Tomato & Garlic Pesto, fold in chopped or shredded provolone cheese. Refill hollowed potatoes and
heat to serving temperature in oven as needed.
Tomato Mustard Sea Bass
1 tbs Dried Tomato & Garlic Pesto
6 oz filet of sea bass
1 tsp dijon mustard
pinch crushed rosemary, thyme, oregano
Coat sea bass with mustard, broil 3 minutes. Turn, coat other side and sprinkle on herbs, broil 3 minutes.
Sauce with Dried Tomato & Garlic Pesto, sprinkle with cheese and broil just until cheese bubbles.

2 oz Dried Tomato & Garlic Pesto
6 oz turkey steaks
1 tsp olive oil
1 tsp lemon juice
1 oz Marsala wine
Pound turkey steaks very thin and tear into pieces about 2x2". Sear in
olive oil turning to brown both sides. Deglaze with lemon juice, add Dried
Tomato & Garlic Pesto and wine. Heat to serving temperature and reduce sauce
slightly.
