See how Cilantro Pesto can inspire a broiled breast of 
chicken sandwich. Add a bit of roasted red bell pepper 
and sliced red onion for sprightly color.

CHICKEN SANDWICH WITH CILANTRO PESTO

1 (4 oz.) Grilled chicken breast
2 oz. roasted red bell pepper, sliced
4 oz. Cilantro pesto
2 slices red onion (1/8-1/4 inch thick)
1 (6 inch) French bread

Slice the bread in half lengthwise and spread the Cilantro Pesto on each half. Layer the sliced red onions, roasted red bell peppers and chicken. Layer the second half of the bread and cut the sandwich in half.
