Chipotle Carnitas Enchiladas
Brush pork strips with Chipotle Pesto  to coat all sides. Grill with 
sliced  red and green peppers and onions.  Toss cooked mixture 
with shredded  cheese and more Chipotle Pesto and roll into tortillas. 
Place filled  tortillas seam side down in baking dish, cover with white 
sauce mixed with  Chipotle Pesto and heat to serving  temperature.

Chipotle Fettucine Phoenix Blend well equal parts cream 
cheese, Southwest Chipotle Pesto and freshly shredded parmesan
 cheese. Stir into hot cooked fettucine and warm to serving temperature 
over low heat. Stripe with additional Chipotle Pesto as garnish.

Zesty Grilled Vegetables Coat shrimp, steak or chicken,  
sliced eggplant or zucchini with Chipotle Pesto before grilling.  Use 
more pesto, with a tiny bit  of lemon juice or sherry stirred in, as a 
garnishing sauce.

Southwest Crab Cakes Serve crab cakes, crisped with 
shredded jicama, on a pool of Chipotle Pesto.

MASHED POTATOES with Southwest Chipotle Pesto
Blend 1 tablespoons (or more to taste)
Armanino Southwest Chipotle Pesto into 
3/4 cup mashed potatoes. Great with steak 
or roast beef.
