Many Green Pasta
For each serving:
1 tbs Basil Pesto
1 oz each 1" pieces fresh asparagus and green beans
1 oz frozen peas
1 tbs chopped parsley
1 chopped scallion
1 cup cooked spinach fettucine
Microwave or steam asparagus
and beans to tender crisp. Add
pesto, peas, parsley and scallion to hot pot, stir until pesto and peas
are thawed. Add asparagus, beans
and fettucine, stir to coat well.
Cheese & Crab Bites
2 tbs Basil Pesto
1 lb firm cheese such as Colby,
Jack, Edam or Provolone
½ cup cooked crab pieces
Cut cheese into 1½” cubes. Use melon baller to hollow each piece
(save trimming for other recipes). Mix a crab with pesto to fill cheese.
Garnish with toasted pine nuts.
Basil Pesto Wine Sauce
1/3 cup white wine
1/3 cup Basil Pesto
1 tbs flour
Remove cooked chicken or fish from cooking pan (keep warm) and heat wine in drippings. Blend in flour until smooth, then blend in Basil Pesto and heat gently. Pour sauce over entree, garnish with slice of lemon.
Basil Roulade of Salmon
6 oz salmon fillet
1 tbs Basil Pesto
Pound fillet to flatten and spread with pesto. Roll, secure with small
picks, pan sear and finish in oven. Slice diagonally and serve on pool
of warmed Basil Pesto.
