Artichoke Risotto


FOR TWO SERVINGS

     3-1/2 oz arborio rice
      3 oz Armanino Artichoke Pesto
      14 oz chicken broth 
      1 Tbs diced onion 
      1 Tbs olive oil

Saute onions in olive oil until translucent. Add rice and cook 2 to 3 minutes, until rice is well coated. Add chicken broth a little at a time and cook, stirring frequently until all liquid is absorbed. Parmesan cheese can be added, if desired. Stir in artichoke pesto and serve.
