Basil Pesto Frittata with Garlic Sourdough Bread

Armanino
Basil Pesto, thawed
Spaghetti, cooked
Onion, diced
Eggs, beaten
Butter
Prosciutto (or Ham), diced
Parmesan, shredded
Colombo Garlic Sourdouh
This is a great way to use leftover spaghetti noodles. Preheat oven to 375 degrees. Lightly butter a round pie plate or casserole dish and set aside. In a small saucepan, add butter and sauté onions until tender, remove from heat. Add noodles and half the Armanino Basil Pesto to onions and mix. Place the noodle mixture in the bottom of th e pie plate. Combine the remaining ingredients and pour on top of the noodles. Bake until set and eggs no longer jiggle. Decorate plates with remaining Pesto. Warm slices of Colombo Garlic Sourdough Bread in the oven for 3-5 minutes and serve with Frittata.

Fiesta Ravioli with Garlic Sourdough Bread

Armanino Meat Ravioli
Enchilada Sauce
Mild Salsa
Cheddar Cheese, shredded
Black Olives, sliced, drained
Colombo Sourdough bread
Preheat oven to 350 degrees. Cook Armanino Beef Ravioli according to directions and drain well. In an 8x 8 pan, line the bottom with the ravioli. Combine the two sauces and top with cheese. Sprinkle olives on top of cheese. Bake for about 30 minutes or until bubbling. Warm slices of Colombo Garlic Sourdough Bread in 350 degrees pre-heated oven for 5-8 minutes.

Servings: 4 Cooking Time: 30 minutes

Tortellini Soup with Garlic Sourdough Bread

Armanino Cheese Tortellini
Tomatoes, diced
Chicken Broth
Onion, chopped
Carrot, sliced
Garlic, minced
Celery, sliced crosswise
Armanino Basil Pesto
Oregano, dried
Parsley, dried
Pepper
Olive Oil
Water
Colombo Sourdough bread
In a large pot, saute onion, celery, carrots in olive oil until onions are transparent. Add tomatoes and simmer for 5 minutes. Add Broth, Armanino Basil Pesto and spices. Add water, cover and simmer for 15 minutes. Add Armanino Cheese Tortellini. Simmer for 10 minutes. Sprinkle with Parmesan Cheese and serve. Warm slices of Colombo Garlic Sourdough Bread in 350 degrees pre-heated oven for 5-8 minutes.

Tortellini Pesto Salad and Pesto Bread

Armanino Cheese Tortellini
Armanino Basil Pesto, thawed
Mayonnaise
Tomatoes, seeded and roughly chopped
Yellow Bell Pepper, seeded and julienne
Cook Armanino Cheese Tortellini according to directions and rinse in cold water to help cool. When cooled, add Armanino Basil Pesto, mayonnaise, tomatoes and bell pepper. Season to taste with salt and pepper. Chill and serve.

Cheese and Pesto French Bread

1 loaf Colombo Sourdough Bread, split lengthwise.
1 7oz Armanino Basil Pesto, thawed
1 8oz Fresh Mozzarella, drained and sliced
1/2 cup Sun dried tomato in oil, drained and chopped

Preheat oven to 350 degrees. Split bread lengthwise and place on a cookie sheet. Spread half of Armanino Basil Pesto on each side of bread. Place slices of Mozzarella evenly on top of pesto and sprinkle sun dried tomatoes on top. Place in oven for 10 minutes or until cheese is bubbling. Slice bread on diagonal and serve. Caution: cheese will be hot!

Chicken Breasts
Butter
Flour
Milk
Armanino Basil Pesto Sauce
Colombo Sourdough Bread
Rinse Chicken Breast and pat dry. Season with salt and pepper and saute for about 10 minutes on each side or until chicken is no longer pink. Set aside. In a small saucepan, melt butter then add flour and stir until smooth and bubbly. Add milk and stir constantly until it thickens. Add 1/2 cup of thawed Armanino Basil Pesto Sauce and taste. More or less Pesto can be added to increase the Pesto flavor. Slice a loaf of Colombo Sourdough Bread and warm in the 350 degree pre-heated oven for 5 to 8 minutes. Place the warm bread on a serving plate and put a cooked chicken breast on top. Pour creamy Pesto sauce over the chicken. 

Servings: 4 -- Cooking Time: 30 minutes

Tri-Color Cheese Tortellini
Butter
Garlic
Prosciutto, thinly diced
Parmesan cheese, shredded
Peas, thaw if frozen
Heavy Cream
Pepper
Cook Armanino Cheese Tortellini according to directions, reserving 1/2 cup of the cooking water. Melt butter in a skillet and add garlic and Prosciutto. Cook for just 2-3 minutes. Add cream and reduce the volume by half. Add peas and cheese. Add Armanino Tri-Color Cheese Tortellini and some of the reserved liquid from cooking. Add pepper and gently stir. Serve.

Cheese Ravioli
Olive Oil
Garlic, minced
Rosemary, crumbled
Prosciutto, sliced in strips
Butter
Parmesan Cheese
Cook Armanino Cheese Ravioli according to directions and set aside. In a skillet, heat olive oil and butter. Add garlic and rosemary. Stir, then add Prosciutto and separate pieces. Add to ravioli in the pan to warm. Top with shredded Parmesan Cheese and serve.

Preheat oven to 350 degrees. Take a loaf of Colombo Sourdough Bread. Cut diagonally and place on a cookie sheet. Warm in oven for 10 minutes and serve with ravioli.

Servings: 6 Cooking Time: 15 minutes

Tri-Color Cheese Tortellini
Cherry Tomatoes, halved
Cheddar Cheese, shredded
Chicken Breast, cooked and diced
Bacon Bits, cooked
Ranch Dressing
Cook Armanino Cheese Tortellini according to directions and let cool. Add tortellini, tomatoes, chicken, bacon bits and cheese to a large bowl and mix. Add ranch dressing, mix well and chill. Serve in chilled lettuce cups. Serves 6.

Preheat oven to 350 degrees. Take a loaf of Colombo Garlic Bread. Cut diagonally and place on a cookie sheet. Warm in oven for 10 minutes and serve with salad.

Cucumber, seeded and chopped

Italian or Greek Salad dressing
Cook Armanino Cheese Tortellini according to directions and rinse in cold water to help cool. Add the remaining ingredients, toss gently and chill. Sprinkle the top with parsley and serve.

Preheat oven to 350 degrees. Take a loaf of Colombo Sourdough Bread. Cut diagonally and place on a cookie sheet. Warm in oven for 10 minutes and serve with salad.

Armanino Beef Ravioli
Spaghetti Sauce
Tomatoes, diced and drained
Basil
Oregano
Garlic Salt
Mozzarella Cheese, shredded
Monterey Jack Cheese, shredded
In a medium bowl combine spaghetti sauce, tomatoes, basil, oregano and garlic salt. In a separate bowl, combine cheeses. Pour 1/3 of the sauce mixture into an 11 x 7 pan. Place 1 layer of frozen ravioli on top of the sauce. Cover with 1/2 of the cheese mixture. Repeat steps of sauce, ravioli and cheese. Cover with sauce on top. Cover the pan and bake in a 400 degrees preheated oven for 40 minutes. Top with shredded Parmesan cheese and serve. Serves four. Cooking time 42 minutes.

Slice a loaf of Colombo Garlic Sourdough Bread and place in warm oven (about 200 degrees F) until bread is warm and toasty.

Armanino Cheese Tortellini
Armanino Basil Pesto, thawed
Mayonnaise
Tomatoes, seeded and roughly chopped

Cook Armanino Cheese Tortellini according to directions and rinse in cold water to help cool.  When cooled, add Armanino Basil Pesto, mayonnaise, tomatoes and bell pepper.  Season to taste with salt and pepper.  Chill and serve. 

Serve with hot Cheesy Basil bread. Preheat oven to 350°F. Slice a loaf of Colombo Sourdough Bread lengthwise and spread Armanino Basil Pesto on each half.  Place sliced mozzarella and sun dried tomatoes on top.  Bake 10 minutes or until cheese in bubbling. Slice bread diagonally and serve.  Caution: cheese will be hot!
