Cilantro is the Spanish name for
the coriander plant. The word Cilantro is now used only to refer
to the edible leaves; the name coriander is reserved for the
seeds.
Also known as Chinese Parsley or
Mexican Parsley, cilantro is a almost a hallmark of
Mexican and Southeast Asian cooking. It's found in most salsa and is common as flavoring for fish,
poultry, stewed meats, soups and casseroles.
Cilantro has become popular in
the U.S. in recent years, often used fresh in mixed green
salads, and frequently as a seasoning that suggests a
combination of orange or lemon with sage, caraway or cumin.
